RAARO is a cocktail bar in Florence, founded by Claudio Mariottini from a deep passion for mixology, with interiors designed by Francesco Barthel. The name reflects our philosophy: a constant search for the rare, for what exists beyond the ordinary and elevates the experience above the expected.
From July to November 2026, RAARO will take over Hotel Villa Carlotta in Taormina for a seasonal residency at the boutique hotel, a member of Small Luxury Hotels of the World.

The SIPS offering, developed by Bar Manager Ginevra Gabbrielli together with Head Bartender Mattia Vercelli, reflects a precise approach to mixology: immediate yet refined, guided by balance, research, and a focus on rare ingredients and techniques.
Alongside the great classics of mixology, available on request, the drink list features reinterpretations and signature creations that explore the dialogue between heritage and contemporary expression.
RAARO’s signature cocktails showcase infusions, cooking techniques, and artisanal methods, often giving each drink a tangible dimension through a garnish, bite, or crafted element made from ingredients left over from the same process, enhancing the overall sensory experience.
The journey continues with a tasting of our signature cocktails and four interpretations of the Negroni, before concluding with a Low & No Alcohol selection created with the same attention to detail and precision.
