Welcome to RAARO Sips & Bites, a Cocktail Bar and Bistrot in Florence born from Claudio Mariottini’s passion for mixology, with interior design by Francesco Barthel.
The name RAARO (with two A’s — because one alone wouldn’t be rare enough) perfectly expresses our philosophy: the pursuit of rare excellence, of what is uncommon and elevates the experience beyond the ordinary.
Sips
The SIPS proposal, created by Bar Manager Ginevra Gabbrielli together with Head Bartender Mattia Vercelli, stems from a precise vision of mixology: to be immediate, balanced and research-driven, with a constant focus on rare ingredients and refined techniques.
Alongside the great classics of mixology, also available on request, the drink list presents a selection of classics, twists and signatures designed to express the dialogue between roots and contemporaneity.
RAARO’s Signature cocktails explore infusions, cooking techniques and artisanal preparations, often turning the creative process into a material counterpart: garnishes, bites or solid details that expand the experience of the drink.
The journey continues with a tasting dedicated to the Signatures and one dedicated to our four interpretations of the Negroni. A Low & No Alcohol selection, crafted with the same care, complexity and precision, completes the proposal.






Bites
The BITES proposal, led by Chef Arturo Dori, is designed to enhance the mixology experience through familiar flavours, selected ingredients and balanced pairings.
The duchesse are one of the menu’s signature elements: small bites filled with white truffle cream, hummus and confit cherry tomatoes, prosciutto crudo and salted butter, or whipped cod, designed to open the journey with elegance and immediacy.
Among the most representative dishes, the Club Sandwich interprets the idea of comfort through balance and generosity, served with our chips prepared to order.
The kitchen also offers fried bites, tartare and more structured preparations, designed to dialogue with the acidity, freshness, savouriness and roundness of the cocktails.
